[cooking] Sour Cream Chicken Enchiladas

I made some Sour Cream Chicken Enchiladas last week for a couple people who came over for dinner. It was very yummy and the only only changes I made were: (1) Used boneless chicken thighs and shredded with forks and (2) used less than half the cheese suggested.

I'm sorry, did you say "less than half the cheese?" Those words should never be put together in that order... ever!
