For the almond cookies, I made homemade almond paste. It came out a little chunky, not perfectly smooth, and wet. When I was mixing the dough, I did end up adding 3/4 cup of flour, just to bring it together a little bit more. But the almond flavor is wonderful!
The peanut brittle was the best surprise. It only took 10 or 15 minutes to bring together and the microwave does all the work.
